Five years running the floor of a Copenhagen restaurant, with a young team that came and went. Rotas, new starters every few weeks, and a full room on a Friday night. It showed me how fast a team comes apart when nobody is sure who decides what.

I trained as a dental technician in Italy and then worked as a dental assistant in clinics in Italy and Denmark. Clinical work is where I learned that a process is only worth as much as the person following it on a bad day.
